So about those yummie oven roasted portobello's. Doesn't it look delish! They really made my day :)
Just thinking about it makes my mouth water again. Nice and meaty mushrooms with the saltines of the goat cheese and those brioches go so well with rosemary. Hmmmmm...
And so easy. Did I mention how easy this is? Well it is!
Ingredients:
- 2 portobello mushrooms
- 100 gr goat cheese
- rosemary
- thyme
- fresh basil
- small garlic clove
- salt and pepper
- olive oil
Directions:
- Preheat oven at 200 C.
- Wipe the mushrooms clean with some paper towel and remove the stems.
- Finely chop up the garlic and basil leaves and mix together with goat cheese and the other herbs.
- Add salt and pepper to taste.
- Stuff the portobello with your cheese mix.
- Drizzle some oil on your oven tray and place the portobello's on top. Drizzle with some more olive oil and bake in 15-20 minutes (depending on how big your portobello is).
- Garnish wit some fresh basil and serve with these lovely brioches and ENJOY!
