Beetroot and Feta salad

I made this lovely salad for lunch last week. It was so yummmm! Sweet beets, salty feta and creamy pine nuts all come together to party in your mouth. It's not only very healthy, but also whipped up in a matter of minutes. In fact this salad is so simple I hardly consider this to be a recipe but rather a gathering of foods on my plate :)

Ingredients:

  • 2 cooked peeled beets
  • romain lettuce
  • handful of mini roma tomatoes
  • handful of roasted pine nuts
  • 2-3 tbsp feta cubes
  • half a small garlic clove
  • 1 tsp honey
  • 1 tbsp olive oil
  • squeeze of lemon juice
  • freshly ground black pepper

Directions:
  1. Arrange lettuce on a plate. 
  2. Cut beets in 0,5 cm thick slices and place on top of lettuce.
  3. Cut tomatoes in half and arrange on plate.
  4. Add feta cheese.
  5. Crush the garlic and mix together with olive oil, honey, lemon juice and some freshly ground black pepper. Sometimes I heat the dressing in the microwave for a few minutes to get a deeper garlic flavor. 
  6. Sprinkle dressing on top of salad and dig in!
